Vanilla anniversary biscuits

Paper is the gift given for a first wedding anniversary.  In keeping with tradition I bought my husband a writing set but I couldn't resist baking these cookies...they are supposed to be for a wedding but why not relive the happy memories on your anniversary day

I used the Casalare plain flour blend for the mixture but it was very difficult to roll and cut and I found the dough crumbled a lot even after it had been refrigerated for a while...I have a feeling I should have added some xantham gum to the mix or agar agar? any advice on that one would be great!
